The  Junior Sommelier

ASPI has among its priorities the professional training of sommeliers. For this reason, in 2018 it started collaborating with some high schools for hotel establishments, with a project called “Sommelier Junior”, which develops within their curricular study path.

The purpose of this initiative is to provide future ambassadors of food and wine and tourist hospitality with the most current and indispensable work to complete their training.

This professional ASPI’s proposal that aims to train hotel operators, with a kitchen and restaurant service that are capable of evaluating situations and  making appropriate decisions from real professionals in the sector itself. This initiative has a high technical and cultural value.

Here are some of the topics of this project proposed to the students: The figure of the Mastro Coppiere  and the Sommelier, Responsible approach to alcoholic beverage, Viticulture, Oenology, Tasting Technique, Food-wine pairing Technique, National Enography and the most important producing countries.
