Gennaro Buono

Gennaro Buono, Sommelier and Best Italian Sommelier ASPI 2012, works at the two Michelin stars “Il Pagliaccio” in Rome. Gennaro’s curriculum counts important experiences abroad, from Switzerland to Holland, without forgetting the prestigious roles covered at the Savoy Beach Hotel Paestum, the Capri Palace Hotel and many others.

Faced with the apparent banality of the question “what job do you do?”, Gennaro instinctively answers us saying that, first of all, he follows his passion.
“The sommelier is an extraordinary profession, which has clearly evolved a lot in recent years. Today a good sommelier has different skills, which apart from wine, ranging from the world of water, to coffee, tea, culture on cigars, oil, cheeses , cured meats and everything related to sensory analysis … all this gives me new stimuli every day, many researches, many parallel worlds that open up, the possibility of discovering new cultures, customs, ways of doing, different service techniques … The beauty of being able to transmit all these emotions to our guests repays the many efforts that are made every day, the many hours of work, often followed by study and updating. The world of professional sommellerie is fascinating, when I taste a wine I retrace its history in the glass … vineyards, land, the magic of nature accompanied by man’s hand is capable of creating such wonders and we have the privilege of being able to touch everything with your hand this!”
